With matcha infused simple syrup and coconut milk, this is a fun twist on an old classic that dates back to 1876.  If you want to vary the garnish you can float a dried lemon wheel on the top or use a lemon wedge.  For an egg white alternative, you can get a lovely foamy top using chickpea juice which is vegan.

2 oz Upstate Vodka

1 egg white

1/2 oz Lemon Juice

1 oz matcha infused simple syrup (1:1) (To make simple syrup: Infuse 3 oz sugar and 3oz water with Matcha green tea . Put all three ingredients into a tea mug and put in the microwave for 1 min. Let steep for 4 minutes)

1 oz Coconut milk

2 oz Soda water

Glass: Collins

Add all ingredients (except the soda water) to a mixing glass/tin. Add ice and shake vigorously for 20 seconds.

Strain into a chilled Collins glass. Finish with Soda water. Garnish with green tea powder on rim or top of foam. Enjoy!
