Butterfly Peacock

While this may seem a bit more ambitious it is really an easy cocktail that is gorgeous and surprising.  Anyone can make simple syrup, so the pea flower syrup isn’t difficult and all of the unusual ingredients are easily found on Amazon or at your local specialty store.


  • Barspoon of Orgeat
  • 0.5 butterfly pea flower simple syrup (2:1)
  • 1 Oz Upstate Vodka
  • 0.25 Oz lemon juice
  • 0.25 Honey syrup (3:1)
  • 0.5 St. Germain elderflower liquor


For the butterfly pea flower syrup: using boiling water, create a 2:1 simple syrup by taking 8 oz of boiling water to 16 oz sugar. Once off the heat, steep the hot 2:1 simple syrup with 12-15 dried butterfly pea flowers and steep for 20 minutes. Strain the flowers and let the syrup cool before use.

Build the orgeat, butterfly pea flower simple syrup, and Upstate Vodka in a shaker, 10 second shake & double strain into Collins glass with ice, add a splash of soda but leave wash line 1 inch lower from the rim of glass to create room for the contents in the shot glass.

Build in a separate shot glass the lemon juice, honey syrup, and elderflower liquor. Pour the shot into the Collins glass after serving, stir and enjoy the color changing show.
